Huhu grubs are a delicacy and are sought after because of their high protein and fat content.
These native larvae can be found eating away at moist soft or rotting wood for 2-3 years before transforming into Aotearoa’s largest and heaviest beetles.
Huhu grubs have no eyes and once they turn into adults, they do not eat, so only survive for about two weeks.
However, adults have sharp pincers on them that will ‘bite’ if threatened. Believe us, it hurts! If they do hold on to you, just shake your body part vigorously and they will let go.
They can be eaten raw but we love them toasted over a fire to enhance their nutty taste. They don’t need anything added because huhu grubs have plenty of natural fat.
Just put them directly on the fire or cook in a frypan without oil and eat. Tino reka!
They are usual quite tightly tucked into the cavity of the wood so might need a bit of prying to get out.
